The classic French strawberry cake, the Fraisier, is a delightful and visually impressive creation that is somewhere between a cake and a pastry. Our Fraisier consists of two thin layers of almond Genoise sponge filled with a vanilla crème mousseline (German buttercream) and plenty of strawberries. It is completed with a thin layer of torched meringue and a mix of fresh strawberries and other berries.
