Carrot Cake
Claimed by many countries as their own, our Carrot Cake combines the best parts of the traditional Australian/American recipe with elements of the Swiss Rüeblitorte. Spiced with cinnamon and ginger, and full of walnut and sultanas, the two cake sandwiches are separated by a layer of orangey cream cheese filling, and decorated on top with more cream cheese icing, caramelised walnuts and home-made mini marzipan carrots.
